Recipe: Baobab Ginger Shortbread squares

We received this deliciously tasting yet simple to make recipe from @cookingwithassant. Tasty Shortbread squares with the addition of our very own baobab jam with ginger.

The ingredients:

  • 125g butter
  • 50g caster sugar
  • 1 egg
  • 2 tablespoons oil
  • 1 teaspoon vanilla extract
  • 350g plain flour
  • 2 teaspoons baking powder
  • 1 jar baobab jam with ginger
  • Icing sugar for dusting

For this recipe you won’t any sort of food processor, it can all be done by hand. Pre heat the oven 180ºC. It should also only take round 20 minutes to prepare and around 40 mins to make (including cooling time).

Method:

  1. In a bowl, whisk together the butter and sugar until combined.    Whisk in the egg, oil and vanilla extract
  2. Mix in the baking powder and 250g of the flour with a spoon until combined. Bring the mixture together using your hands to make a dough
  3. Spray a (9 inch) square baking tray with cooking oil. Spread out half of the dough on the tray. Prick the dough with a fork to prevent bubbles from forming while baking
  4. Spread the Baobab Jam on top
  5. With the remaining dough, mix in the remaining 100g flour and rub with your fingers to form crumb like texture. Sprinkle the crumbs on top of the jam
  6. Bake for 20 minutes, until golden brown on top. Leave to cool for 20 mins, the jam will be hot. 
  7.  Sieve icing sugar on top. Cut into shortbread squares
