Recipe: Indulgent snacking with Baobab Chocolate

Accompanying increased consumers interest in personal wellbeing has been a growing demand for premium products. At the same time consumers are also increasingly conscious of the environmental impact of products. Guilt free indulgence therefore requires speaking to health as well as to environmental and ethical priorities.

How does this relate to a typically indulgent product such as chocolate? Especially given the rise of premium, healthy and ethical snacking that has occurred during lockdown. Studies show consumers are making more conscious decisions, opting for healthier sweet treats during lockdown. Consumers do not think of chocolate as they think of fruit and vegetables. But although chocolate is an indulgent treat, it can still be a healthy treat.

Chocolate begins with the cacao tree, (Theobroma cacao). It grows within 20 north and south of the Equator in a mix of hot temperatures, rain and shade. Each tree bears oval fruits or pods and within each pod are 30 – 50 seeds, or cacao (or cocoa) beans.

After harvesting the cacao beans they are fermented, dried and roasted before being ground into cocoa mass. Both cocoa powder and cocoa butter are products of cocoa mass. Cacao refers to the tree, pod and bean or seed, and cocoa refers to the bean after it has been fermented, dried and roasted.

Dark chocolate’s bright future

Dark chocolate is made using only cocoa mass, cocoa butter and sugar. For milk chocolate a fourth ingredient, milk power is added.  White chocolate on the other hand does not contain any cocoa mass.   It is made with cocoa butter, sugar and milk powder, so some do not consider it a true chocolate.

Due to high cocoa content, dark chocolate contains iron and magnesium and is also a source of protein. So this indulgent product does offer some health benefits.

Baobab Chocolate Oats Pot

Here’s a delicious recipe you can make with our Baobab Chocolate Spread.  It works well as a tasty starter to the day – a delicious, protein rich, slow releasing energiser. It’s even better as a scrumptious treat at the end of an action-packed day. It tastes amazing and is dead easy to make. This recipe for the Baobab Chocolate Oats Pot makes 8 pots and is brought to you courtesy of @OrganicAlex.

The ingredients:

  • 50g oats
  • 20g goji berries
  • 20g pecans
  • 20g pistachios
  • 20g nibbled almonds
  • 190g Baobab Chocolate Spread
  • 400ml Coconut Cream
  • 30g coconut oil

For this recipe you’ll need some sort of food processor/blender. You’ll also need some lolly moulds. It should also only take round 20 minutes to prepare and over night to freeze.

Method:

  1. Combine oats, goji berries, pecans, pistachios and nibbled almonds (For a nut-free version, replace pecans, pistachios and almonds with seeds (pumpkin seed, sunflower seeds, golden linseeds, hemp seeds. chia) of your choice) and share between 8 small pots.   
  2. Pour coconut cream, Baobab Chocolate Spread and coconut oil in a bowl and blend until smooth.  
  3. Pour over the oat mixture in the 8 pots and leave in fridge overnight.
